Located near the volcanic landmark of Arthur's Seat, Holyrood draws inspiration from Edinburgh's rich 19th-century brewing heritage, particularly the legendary 'Charmed Circle' of breweries. This single malt is crafted using heavily peated malted barley and fermented with select yeast strains designed to maximize flavor complexity. Founded in 2019 by Rob and Kelly Carpenter alongside former Macallan master distiller David Robertson, Holyrood Distillery marked the historic return of single malt whisky distilling to the center of Edinburgh after nearly a century.
