Representing a bold departure from the historically light and grassy style of Lowland single malts, this peated expression from Edinburgh's Holyrood Distillery showcases the exciting frontier of modern Scottish distilling. Located near the volcanic landmark of Arthur's Seat, Holyrood draws inspiration from Edinburgh's rich 19th-century brewing heritage, particularly the legendary 'Charmed Circle' of breweries. This single malt is crafted using heavily peated malted barley and fermented with select yeast strains designed to maximize flavor complexity. Maturation in a first-fill Bourbon barrel (Cask No. 637) infuses the smoky, phenolic spirit with rich layers of sweet vanilla, toasted coconut, and warm baking spices, creating a dramatic tension between coastal peat smoke and sweet American oak.

Established in 2019 by founders Rob Carpenter and David Robertson, Holyrood Distillery marked the historic return of single malt whisky production to the heart of Edinburgh after nearly a century.
