This cuvée pays direct homage to the 'Chanoines' (canons) of the Chapter of Notre-Dame, who constructed the magnificent 12th-century cellars in Beaune where Maison Jaffelin still ages its wines today. Crafted from Pinot Noir sourced from select vineyards across Burgundy, this wine is a testament to the house's historical roots. Utilizing traditional gravity-flow techniques in their gravity-fed vat room, the winemakers preserve the delicate, bright red fruit profile characteristic of the region. The wine undergoes fermentation in stainless steel and oak vats before aging, resulting in a classic Burgundy expression that balances fresh acidity, supple tannins, and a subtle earthy complexity born from the region's limestone-rich soils.

Founded in 1816 by brothers Charles and Henri Jaffelin, Maison Jaffelin is celebrated as the smallest among Burgundy's historic négociant houses, located in the ancient center of Beaune. The estate ages its wines in remarkable 12th-century vaulted cellars originally built by the Canons of the Collégiale Notre-Dame. Operating on an artisanal, small-batch scale, the house employs gentle, gravity-fed vinification to preserve the pure expression and distinctive character of each climats across the Côte de Nuits and Côte de Beaune.
