The name 'Les Chapitres' pays tribute to the Chapter of Notre-Dame, the medieval canons who once oversaw the very 12th-century cellars where Jaffelin's wines are still aged today. Founded in 1816 by brothers Charles and Henri Jaffelin, Maison Jaffelin is celebrated as the smallest among Burgundy's historic négociant houses, located in the ancient center of Beaune. The estate ages its wines in remarkable 12th-century vaulted cellars originally built by the Canons of the Collégiale Notre-Dame. Operating on an artisanal, small-batch scale, the house employs gentle, gravity-fed vinification to preserve the pure expression and distinctive character of each climats across the Côte de Nuits and Côte de Beaune.
