Hailing from the historic village of Chassagne-Montrachet, where red wines once dominated the landscape before Chardonnay took center stage, Jean-Marc Pillot's Vieilles Vignes Rouge is a beautiful tribute to the region's traditional heritage. Sourced from old Pinot Noir vines deeply rooted in clay-limestone soils, this cuvee benefits from the natural concentration and complexity that only mature vines can deliver. Pillot employs traditional Burgundian vinification with partial destemming and careful temperature control, followed by aging in French oak barrels.
