M. Chapoutier's Hermitage 'Le Pavillon' is one of the most legendary and critically acclaimed red wines of the Northern Rhône, representing the pinnacle of the estate's 'sélections parcellaires.' Sourced from ancient Syrah vines—some exceeding 65 years of age—planted on the steep, granite-rich slopes of the prestigious Les Bessards lieu-dit on the Hermitage hill. The parcel's name derives from a small historic pavilion that once stood among the vines. Here, a remarkably thin layer of sediment sits directly atop a massive granite bedrock, forcing the vine roots deep into the earth to find nutrients. This extreme terroir, farmed strictly under biodynamic principles, yields incredibly low quantities of highly concentrated fruit. The wine is fermented in traditional concrete vats and aged in oak barrels for 18 to 22 months, bottled unfined and unfiltered to preserve its intense mineral core, powerful structure, and deep, dark fruit character.
