The name 'Les Granilites' directly references this stony, mineral-rich granite terroir, which provides a distinctive structural tension and flinty backbone to the wine. Historically, the wines of Saint-Joseph were celebrated as the 'vin de Mauves' and were famously praised by Victor Hugo in his masterpiece, Les Misérables. To preserve the purity of the fruit and the unique signature of the soil, the wine is fermented and aged on its fine lees in a combination of stainless steel tanks and large oak demi-muids.
