Markus Molitor's Graacher Domprobst Riesling Spätlese is a masterclass in the dramatic terroir of the Middle Mosel. The Domprobst vineyard, named after the cathedral provost of Trier who historically collected tithes here, is renowned for its steep, weathered blue slate soils rich in clay. This unique geology retains moisture and imparts a profound, smoky minerality to the 100% Riesling grapes. Molitor, famous for his meticulous hand-selection and commitment to traditional craftsmanship, ferments this wine using ambient yeasts in large, neutral oak 'Fuder' casks.
