The legend of Amarone itself is entwined with Cantina Valpolicella Negrar, where in 1936 cellar master Adelino Lucchese tasted a barrel of Recioto that had fermented completely dry, declaring it not merely bitter ('amaro'), but grandly bitter—'Amarone'. Crafted through the sacred local tradition of appassimento, hand-harvested grapes rest in wooden trays or drying rooms for several months over winter, losing moisture and concentrating sugars, aromatics, and natural acidity. The dried grapes undergo slow fermentation and extended maturation in oak barrels. The result is an opulent, velvety red wine packed with ripe dark cherry, dried plum, cocoa, and warm spices, representing the quintessential soul and timeless tradition of Verona's noble red wines.
