Osborne's Palo Cortado Capuchin is a liquid piece of Andalusian history, drawing its name from the Capuchin Capuchino monks of Jerez who established the original solera in 1790. Crafted from Palomino Fino grapes grown in the iconic, chalky-white albariza soils of Jerez, Spain, this rare Sherry undergoes a mystical transformation. It begins its life aging biologically under a delicate veil of flor yeast, but naturally loses this protection to transition into decades of oxidative aging. Classified as a VORS (Very Old Rare Sherry) with an average age exceeding thirty years, it bridges the gap between the delicate, aromatic complexity of an Amontillado and the robust, muscular structure of an Oloroso, offering profound notes of toasted hazelnuts, dried orange peel, and saline minerality.
