Paul Lato's 'Done & Done' Chardonnay is sourced from the historic Rincon Vineyard, located in the cool Arroyo Grande Valley of San Luis Obispo County. Originally planted by the pioneering Talley family, Rincon is celebrated for its unique soil composition, where calcareous clay on the hillsides meets sandy loam on the valley floor. This distinctive terroir, heavily influenced by maritime breezes from the nearby Pacific Ocean, imparts a striking mineral tension and vibrant natural acidity to the grapes. Paul Lato, guided by his philosophy of minimal intervention, crafts this single-vineyard Chardonnay to achieve a harmonious balance between California's signature sun-kissed richness and a structured, Old World elegance. The playful name 'Done & Done' captures Lato's immediate realization of the vineyard's extraordinary potential upon his first visit. Fermented and aged in select French oak barrels, the wine showcases a texturally complex profile defined by stone fruits, citrus blossoms, and a distinct saline minerality.
