Paul Lato's 'Done & Done' Chardonnay is sourced from the historic Rincon Vineyard, located in the cool Arroyo Grande Valley of San Luis Obispo County. Originally planted by the pioneering Talley family, Rincon is celebrated for its unique soil composition, where calcareous clay on the hillsides meets sandy loam on the valley floor. This distinctive terroir, heavily influenced by maritime breezes from the nearby Pacific Ocean, imparts a striking mineral tension and vibrant natural acidity to the grapes.
