Cultivated on a dedicated single-parcel site characterized by deep clay-limestone soils and rolled pebbles, this cuvée pairs old-vine Carignan with Syrah. Fermentation takes place with temperature-controlled maceration lasting up to four weeks to extract dense color and ripe tannins, followed by maturation in a combination of French and American oak barriques over approximately six to eight months.

Established in 2000 by fourth-generation vigneron Jean-Claude Mas, Domaines Paul Mas has become a preeminent force redefining modern viticulture in the Languedoc.
