The Bernkasteler Doctor vineyard is one of the world's most legendary wine-growing sites, steeped in 14th-century folklore where its wines supposedly cured the terminally ill Prince-Bishop Boemund II of Trier. Reichsgraf von Kesselstatt's parcel in this ultra-steep, south-facing sanctuary of weathered Devonian blue slate yields a Riesling of extraordinary intensity. To produce this rare Eiswein, healthy grapes are left on the vine into the depths of winter, waiting for temperatures to plummet to at least -7 degrees Celsius. Harvested by hand in the freezing pre-dawn hours, the grapes are pressed while still frozen, leaving the water behind as ice and extracting a precious, highly concentrated nectar. The resulting wine is a masterclass in balance, marrying luscious, honeyed sweetness with the electric, laser-like acidity characteristic of the Mosel.
