Reichsgraf von Kesselstatt harnesses the naturally chilly microclimate of the Saar to craft this liquid gold. Eiswein requires the grapes to freeze naturally on the vine, harvested in the freezing pre-dawn hours at temperatures of -7 degrees Celsius or lower. Because the water in the grapes freezes into ice crystals, pressing them yields an incredibly concentrated, sweet nectar balanced by the electric, vibrant acidity characteristic of the Saar's cool winds and slate soils.
