Rolly Gassmann's Tokay Pinot Gris Rotleibel Vendanges Tardives is a masterclass in Alsatian late-harvest winemaking, originating from the historic Rotleibel lieu-dit in Rorschwihr. The name 'Tokay Pinot Gris' pays homage to the historical designation of the grape in Alsace before international agreements restricted the term. The Rotleibel vineyard is characterized by its deep, iron-rich, clay-limestone marl soils, which impart a profound mineral complexity and structural power to the slow-ripening Pinot Gris grapes. Harvested weeks after the main crop to allow for partial botrytis (noble rot) development, the grapes undergo a slow, natural fermentation using indigenous yeasts. True to the estate's signature philosophy, the wine is aged extensively in the cellar before release, allowing its intense sweetness, vibrant acidity, and notes of honeyed stone fruits, smoke, and beeswax to harmonize into a luxurious, texturally opulent masterpiece.
