โจ Technical Specifications
Trapiche's Profuso is a rare and captivating expression of Mendoza Malbec, crafted in the traditional encabezado (fortified) style. This method, reminiscent of classic Port production, involves halting the fermentation of late-harvested Malbec grapes by adding grape spirit, which preserves the natural sweetness of the fruit while elevating the alcohol content. The wine is then subjected to extended oak aging, developing a complex profile of dried dark fruits, cocoa, sweet spices, and toasted nuts. It represents a bold, artisanal side of Trapiche, showcasing the incredible versatility of Malbec when treated with historical European fortification techniques.
