The name pays homage to 'Fût 27,' a historic large oak foudre in Trimbach’s deep, cool cellars in Ribeauvillé, where this precious nectar undergoes an incredibly slow fermentation and aging process. The grapes are meticulously harvested by hand, berry by individual berry, selecting only those perfectly shriveled by botrytis.
