Maison Trimbach's 'Sauvage' designation—most famously represented by their Pinot Gris Réserve Sauvage—is a testament to the family's legendary dry, structured winemaking philosophy. In a region where Pinot Gris is frequently crafted with residual sweetness, Trimbach's 'Sauvage' embraces a bone-dry, intensely gastronomic character. Sourced from select limestone and clay-rich vineyards around the historic town of Ribeauvillé, the grapes undergo a cool fermentation in stainless steel and neutral oak vats. In keeping with the house style, malolactic fermentation is systematically avoided to preserve the grape's natural, vibrant acidity. The name 'Sauvage' (wild) pays homage to the untamed, smoky, and earthy complexity that Pinot Gris develops in Alsace's unique terroir, resulting in a wine of exceptional purity, tension, and mineral depth.
