✨ Technical Specifications
Cultivated on Pliocene clay-sand and fossiliferous alluvial soils along south-facing slopes, Sto Ippolito blends Sangiovese, Merlot, and Syrah. Vinification takes place under temperature control in stainless steel with extended skin maceration, followed by maturation in French oak barriques to polish the structural tannins and integrate spicy, balsamic depth.
🍾 About the Producer
Established in 1961 by thirty local winegrowers in Leonardo da Vinci's Tuscan birthplace, Cantine Leonardo da Vinci has grown into a premier cooperative enterprise, today under the stewardship of the Caviro Group. The estate's flagship Villa Da Vinci collection draws its fruit from historic vineyard parcels undulating across the Montalbano hills west of Florence. Here, south-facing slopes resting between 30 and 40 meters above sea level are characterized by fossil-rich Pliocene alluvium and clay-sand soils, tempered by gentle Mediterranean breezes. Winemaking adheres to the producer's technical framework inspired by Leonardo's viticultural writings, marrying contemporary temperature-controlled fermentation with tailored wood aging. The signature Santo Ippolito Toscana IGT exemplifies this philosophy, harmonizing 40% Sangiovese with 30% Merlot and 30% Syrah aged in barriques to achieve a structured, supple profile redolent of ripe blackberries, balsamic spices, and refined, supple tannins.
