To create this Sparkling Blanc de Blancs, a carefully selected base of white wines undergoes vacuum distillation. This modern, gentle process extracts the alcohol at a low temperature of around 29 degrees Celsius, preserving the delicate, volatile fruit aromas and natural acidity of the grapes.
