Johannes Leitz was a pioneer in the high-quality non-alcoholic wine movement, recognizing a growing global demand for premium alternatives that do not compromise on taste or terroir. The 'Eins Zwei Zero' name is a clever, rhythmic play on the German count-in 'Eins, Zwei, Drei' combined with 'Zero' for its alcohol-free status. To craft this sparkling Riesling, Leitz utilizes a modern vacuum distillation process. By lowering the atmospheric pressure inside the distillation column, the boiling point of alcohol is reduced to around 29 degrees Celsius. This extremely gentle thermal treatment preserves the delicate, volatile Riesling aromas—such as white peach, crisp red apple, and citrus—and maintains the grape's signature vibrant acidity. Carbon dioxide is then integrated to create a fine, persistent mousse, resulting in a refreshing sparkling beverage that closely mirrors the structure and vivacity of a traditional Rheingau sparkling Riesling.
