The Rüdesheimer Klosterberg Riesling Eiswein is a rare masterpiece of extreme viticulture, born from the steep, slate-laden slopes of the Rheingau. Eiswein (ice wine) requires grapes to freeze naturally on the vine, demanding that harvest take place in the freezing darkness of winter—often in December or January—at temperatures of -7°C or colder. The frozen grapes are pressed immediately, leaving the water behind as ice crystals and releasing a tiny, highly concentrated nectar of pure sugars, minerals, and vibrant acidity. The Klosterberg vineyard, with its historic monastic heritage, provides the ideal microclimate where Riesling can retain its signature electric acidity, balancing the luscious sweetness of this liquid gold. Because of climate change, these vintages are becoming increasingly rare, making each bottle a prized testament to traditional German winemaking resilience.
