Sourced from the steep Rüdesheimer Klosterberg vineyard, this Eiswein originates from weathered Taunus quartzite, loess-loam, and slate subsoils that confer sharp mineral definition. The grapes are left on the vine until deep winter freezes drop ambient temperatures to at least minus seven degrees Celsius. Harvested by hand during the freezing dawn, the desiccated clusters are pressed immediately while frozen, leaving solid water crystals in the press to extract an intensely concentrated must rich in natural sugars and electric tartaric acidity. Fermentation proceeds at low temperatures in temperature-controlled stainless steel tanks to retain pristine primary fruit aromatics, resulting in a rare dessert wine marked by racy tension rather than botrytis-heavy weight.

Weingut Leitz traces its familial viticultural ancestry back to 1744, though its modern renaissance commenced in 1985 when Johannes Leitz assumed control of the war-ravaged, 2.9-hectare family estate in Rüdesheim am Rhein. Through meticulous parcel acquisition and restoration of steep, historic slate and quartzite terraces, Leitz transformed the domaine into a premier Rheingau reference point. The estate's premier holdings encompass celebrated VDP.Grosse Lagen crus on the dramatic south-facing slopes of the Rüdesheimer Berg, including Berg Schlossberg, Berg Roseneck, Berg Kaisersteinfels, and Berg Rottland Hinterhaus. Farming is conducted sustainably under FAIR'N GREEN certification, employing green cover crops, pomace composting, and manual slope work.
