Rooted in the limestone-clay soils around Wettolsheim, this traditional Pinot Blanc cuvée draws its historic moniker from the Merovingian king Clovis. Vinified entirely from organically farmed parcels under low-intervention principles, the fruit undergoes gentle pneumatic pressing followed by temperature-controlled fermentation in inert stainless steel and neutral foudres to preserve freshness. Maturation on the fine lees imparts textural roundness and subtle brioche nuances without obscuring the crystalline orchard fruit and delicate floral character typical of classic dry Alsatian white wines.

Domaine Wunsch et Mann traces its viticultural ancestry in Alsace back to 1793, formally establishing its estate identity in 1948 when Joseph Wunsch and Joseph Mann combined their family heritage in Wettolsheim. Positioned southwest of Colmar along the sun-drenched eastern slopes of the Vosges Mountains, the domaine manages over twenty hectares of vineyards characterized by a complex geological mosaic of limestone, clay, and granite. Under the guidance of proprietor Thierry Mann, the estate transitioned to organic viticulture in 2008 (certified in 2011), underscoring a commitment to soil vitality and pure terroir expression. In the cellar, non-interventionist vinification preserves the vibrant acidity and aromatic nuance inherent to classic Alsatian varieties. Benchmark bottlings include celebrated Grand Cru sites such as Steingrubler, Hengst, and Pfersigberg, alongside traditional Crémant d'Alsace and classic cuvées like the historic Pinot Blanc 'Roi Clovis,' known for their crystalline balance, gastronomic precision, and aging capacity.
