Nalozhen Pelin represents one of Bulgaria's most singular historical beverage traditions, deeply rooted in the folklore and rural heritage of northern Bulgaria. The traditional 'Nalozhen' method involves meticulously layering fresh grape clusters, sliced orchard fruits like apples and quinces, and a complex blend of local herbs centered around Artemisia absinthium (wormwood) into fermentation vats. Established in 2014 by enologist Dimitar Kostadinov and entrepreneur Anton Tanev, Yalovo Winery is a boutique estate located in the picturesque village of Yalovo near Veliko Tarnovo, Bulgaria.
