Nalozhen Pelin is a traditional Bulgarian aromatized wine beverage deeply rooted in the heritage of Northern Bulgaria, particularly around Veliko Tarnovo. Produced by Yalovo Winery using small-batch methods, this style is crafted by infusing a base wine with a proprietary blend of fresh wormwood (Artemisia absinthium) and up to 30 other herbs and fruits (such as apples and quinces). The process creates a uniquely balanced profile characterized by herbal bitterness, vibrant fruitiness, and subtle natural sweetness, honoring an iconic Bulgarian winemaking tradition.

🍾 About the Producer

Founded in 2014 by enologist Dimitar Dimov and entrepreneur Anton Tanev, Yalovo Winery is an artisanal boutique producer situated in the village of Yalovo near Veliko Tarnovo, Bulgaria. Operating out of a repurposed historic village schoolhouse, the winery focuses on revitalizing native and heritage Bulgarian grape varieties, such as Dimyat, Pamid, Gamza, and Rubin. The estate embraces low-intervention, small-batch vinification to produce expressive, terroir-driven still, sparkling, and skin-contact wines. Among its signature offerings is its traditional Nalozhen Pelin, an authentic, heritage-style Bulgarian wine infused with wormwood and regional wild herbs.
