Established in 1923 by Shinjiro Torii, the Yamazaki Distillery is Japan's oldest commercial whisky distillery, nestled at the foot of Mount Tennozan where the Katsura, Uji, and Kizu rivers meet. This unique convergence creates a misty, humid microclimate ideal for whisky maturation. The Yamazaki 12 Year Old, historically labeled as 'Pure Malt' before transitioning to 'Single Malt', is a pioneer of Japanese whisky. Crafted using pure water from the vale of Yamazaki—renowned since ancient times and praised by the tea master Sen no Rikyu—this expression is aged in a combination of American oak, Spanish Sherry casks, and rare Japanese Mizunara oak. The Mizunara casks impart a signature oriental incense and sandalwood character, blending harmoniously with the rich fruit and spice notes derived from the Sherry wood.
